This is a historic cookie baked initially by loved ones from Australia and New Zealand for the soldiers on the front lines in Europe during World War I. Anzac cookies gave soldiers a little taste of home which stayed softer than other baked goods when shipped to lands near and far. Mailing cookies to their deployed husbands required a recipe well suited for long-distance travel.
The composition is oats and coconut, the perfect balance between sweet and savory. It re'minds us of a cross between an oat biscuit and a cookie with subtle notes of butterscotch. It's lovely and perfect with an afternoon cup of coffee.
We bake with intention, without added preservatives, dough conditioners, or chemicals. All-natural and soy-free.
